Tip - Keeping Bananas from Ripening Too Fast

     I read an article a few weeks ago, that if you want to keep your bananas from ripening too fast,  then you should separate them from the bunch at the stem, leaving individual bananas.  That is what the monkeys do!

     I gave it a try and sure enough, my bananas lasted about three days longer than normal.  Now I separate them and put them in the refrigerator.   I have managed to have them last up to a week (with refrigeration), where they are still firm and ripe.

BBQ Sauce

I just have to say that I have been looking for a good bbq sauce recipe and finally found one that I really like.  I like my sauce sweet but not too sweet.  This recipe fit the bill.  Since I cannot reprint it, here is the  link to the recipe from Food Network.  The recipe is for pulled pork, but I use the bbq sauce recipe that is located at the bottom of the recipe.

I did make a few substitutions.

  • Worcestershire sauce - make sure it is gluten free.  You can use wheat free soy sauce as well.
  • Cider Vinegar -  used rice vinegar because of our sensitivity to apples.
  • Corn syrup - used agave syrup.
  • Ketchup -  used my homemade recipe to avoid all our allergens.

Popped Sorghum- A popcorn replacement




      YEAH!  FOR MINI POPS!  This stuff is wonderful!  It tastes just like popcorn!  I am happy to report that where I have failed to pop sorghum at home, that there is a company that does it perfectly.    I have tried several times at home to pop sorghum and have ultimately ended up burning it every time--- leaving me only with that permeating burnt popcorn smell that haunts your house for days afterward.  
     My corn free son just loves these Mini Pops.  Now I can take a bag to the movies with us and he has his own bag of "popcorn".    I order it straight from the website above.  It comes in several flavors, including sea salt and plain, if you have dairy or other allergies.  You can easily take a bag of plain mini pops and flavor it at home.  
     This product is worth adding to your pantry if you are living corn free.  Excellent taste!

GF Quick Cinnamon Raisin Rolls


Free of :  Gluten, Dairy, Soy, Egg




Making the buns:

1 package of Joan's Italian loaves
1/4 cup sugar
1 teaspoon cinnamon
1 teaspoon vanilla sugar (optional)
Raisins
Oil for brushing the tops of buns

     Thaw loaves according to the instructions.  Cut each loaf into five equal pieces.   Mix together sugar, cinnamon, and vanilla sugar.  Oil your hands lightly, and roll each piece in the palm of hands, then flatten into a 3 inch circle.  Place a heaping 1/2 tsp of the cinnamon sugar in the center with three to five raisins.  Pinch the dough together to form back into a ball.  Gently roll in your palms returning it to a smooth ball.  Place in a greased pan.  Brush tops with olive oil. Bake at 425 degrees for 20 minutes.  Drizzle with frosting and eat immediately.



Frosting:

1 cup powdered sugar
1/2 teaspoon vanilla extract
dash of salt
milk substitute of choice ( enough for desired consistency)

    Mix powdered sugar, dash of salt, and milk to a consistency of a thick frosting.  Stir in vanilla extract.  Drizzle on the hot buns.
