I love buffalo chicken pizza, but where does one order that up gluten free. Right in your own kitchen! It does take a little more time if you want to marinade and grill your chicken, but the results are well worth it.
Start with your favorite pizza crust recipe.
(I used this recipe. I substituted out the cornmeal with sorghum to make it corn free.
then, baked it according to the directions.)

Spread about a cup and half of dairy free ranch salad dressing.
(you can make this using dairy free mock hidden valley ranch recipe or penzeys buttermilk dressing.)
I make my ranch dressing a little thicker which is mayo, spice and add a Tbsp of milk at a time until the desired thickness. It makes a nicer pizza sauce this way, or at least I think so.
Grill your chicken. I like to marinade and then grill mine.
You can marinade it in Italian salad dressing if you want.
Let it marinade for at least 15-30 minutes.
Chop the grilled chicken into cubes.
Sprinkle the chicken on top.
Shake on as much hot sauce as you like. If you want to go tame shake about 2 Tbsp.
I shake it on until it looks good and hot!
Top with your favorite dairy free cheese.
We use buffalo mozzarella because it is what we can eat.
Bake at 350 degrees for another 10-15 minutes, or until bubbly and browned.
