Oat Free, Rice Free Granola


Ingredients:
1 cup nuts chopped (walnuts, almonds)
1 cup shredded coconut
1 cup seeds (try sunflower seeds or pumpkin seeds)
1/4 cup ground flax meal
1/4 cup brown sugar
2 Tbsp maple syrup
1/4 cup + 2 Tbsp honey
1/4 cup extra light virgin olive oil 
1 tsp ground cinnamon
3/4 tsp salt
1 tsp vanilla extract
1 cup dried fruit (cran-raisins, raisins, dates, or any favorite)

Directions:
Preheat the oven to 325˚F.
Prepare two baking sheets lined with parchment paper.  Set aside.
In a large bowl mix quinoa flakes, millet, nuts, coconut, seeds, and flax meal.  Set aside.

In a medium saucepan add brown sugar, maple syrup, honey, oil, and salt.
  Stir and heat mixture until boiling.  Turn off and remove from heat.
Add vanilla extract and stir.

Pour the sugar mixture on top of the dry mixture.  Stir until well coated.

Spread half the mixture on prepared baking sheets.

Cook for 10 minutes and stir the granola around on the baking sheet.
Cook for an additional 8-10 minutes.  Make sure not to let it burn, the quinoa cooks quickly.

Cybele Pascal's New Line of GF Cookies

So here is another product that is new on the market... Cybele Pascal's new cookie line!  She has three varieties of cookies..chocolate chip, chocolate chunk, and oatmeal raisin.  If her cookies taste anything like the ones from her cookbook then they should be a real hit.  These cookies fall in line with The Allergen-Free Baker's Handbook cookbook, where all her recipes are free of the top eight allergens.
They haven't hit a store near me yet, but  when they do, I am going to be there to taste them!  I can hardly wait to write a review on them.  Until then, keep an eye out in your store!

Chocolate Banana Ice Cream - Dairy Free



Summer is coming and homemade ice cream is calling me.  
 This recipe starts with frozen sliced bananas and just gets better from there! 

Ingredients:
6 ripe bananas
1-1/2 Tbsp cocoa powder
1/3 cup of canned coconut milk
1/2 tsp vanilla extract
2 Tbsp agave syrup (optional)

Directions:
Slice and freeze bananas at least for one hour.
In a food processor or Vitamix (or other high powered blender), place all your ingredients in.
Blend until smooth and all chunks are blended. 

Pour the ice cream into a container.
Place in freezer until frozen.
Scoop up your ice cream and enjoy!
